GULA MELAKA BANANA CAKE

Ingredients :
250 gm salted butter - soften
140 gm shaved gula melaka
4 large eggs (65 gm each)
270 gm self-raising flour
1/4 tsp baking soda
240 gm ripe bananas, mashed and mix well with a tablespoon of lemon juice
Banana (slices) for decoration (I use walnuts)
Directions :
1. Preheat the oven to 165'C, grease and line a 8 inch round/square cake pan with baking paper.
2. Beat butter and shaved gula melaka using an electric mixer until light and fluffy.
3. Beat in eggs one at a time until well mixed. Scrape in between each egg to get a well mixed batter.
4. Next fold in half portion of the sifted flours (flour, baking soda and salt) then add in mashed banana and stir till combined before adding the remaining flours.
5. Pour batter into prepared cake pan, top with sliced bananas.
6. Bake in preheated oven for approximately 50 minutes or until a skewer inserted in the middle of the cake comes out clean...
