APPLE CINNAMON PASTRIES

Ingredients For Filling :
2 tbsp sugar (25 gm)
1/4 tsp ground cinnamon
1 cup diced apples, skin on (150 gm) ~ to preserve the pectin
3 tbsp raisins (30 gm)
1 egg, beated (I use large egg/grade A)
1 package of store-bought Puff Pastry Sheets
Frosting :
1 tbsp powdered sugar@icing sugar (7 gm), sifted
1-2 tsp heavy cream
Directions :
1. Preheat oven to 400'F/200'C.
2. In a small bowl, combine the sugar with the cinnamon and set aside.
3. In a medium-sized bowl, add the apples, the cinnamon sugar and the raisins. Toss well to combine and set aside.
4. Beat 1 egg until combined. Set aside.
5. Roll out thawed puff pastry onto a floured surface. Cut into 3" by 2" rectangles. Using a pastry brush, brush the egg wash around the perimeter of each rectangle. (You may shape the puff pastry as desired).
6. Fill one half with a scoop of the apple mixture about 1 1/2 tablespoons. Top with 2nd half of pastry and seal shut using the tines of a fork, pressing down into the pastry all the way around.
7. Brush pastry tops with egg wash and then make 4-5 slits across the apple mound for ventilation. Transfer with a floured spatula to a parchment lined cookie sheet.
8. Bake for 30-35 minutes or until golden brown. Remove from oven and allow to cool slightly. Meanwhile in a small bowl, combine powdered sugar and cream until smooth.
9. Drizzle the glaze on the pastries with a fork. Serve and Enjoy!!!!
