CHEDDAR CHEESE BUTTER CAKE
cookbook :   'I Love Butter Cake' Chef Kevin Chai...





Ingredients :

250  gm  unsalted butter
100  gm  margarine
250  gm  caster sugar
 1/2  tsp  salt
    4  eggs grade A/B
100  gm  grated cheddar cheese
340  gm  plain flour
 1/2  tsp  baking powder
  40  gm  extra grated cheese  (for sprinkle)


Method :

1.  Grease and line two 10x20cm (4x8-inch) loaf pans; preheat oven to 175'C.  (I use an 8-inch pan).
2.  Beat butter, margarine, sugar and salt until light and fluffy.
3.  Add in eggs, one at a time, beating thoroughly after each addition.
4.  Fold in grated cheese.  Then fold in sifted flour and baking powder, mix well with a spatula.
5.  Spread batter into prepared pans.  Sprinkle extra cheese over the batter.  Bake in oven for 40 minutes or until cooked.
